Zuma & Roka Staff Party / ズマ&ロカ スタッフ・パーティ


There was a staff party at my workplace, ROKA and ZUMA 3 branches in London!
This event happens every year themed around different topics;
"Cabaret" 2 years ago, "Alice in Wonderland" last year,
and "1950s Hollywood Gram" this year!
From all the employees to the owner of the restaurant dress up beautifully.
Celebrating the 10th anniversary of ZUMA, the real(?) Marilyn Monroe
came to sing Happy Birthday!

私の職場、ZUMAROKAロンドン3店舗合同のスタッフ・パーティ!
毎年、その年のテーマに沿って従業員からオーナーまでが
見事にドレスアップする一大イベント、
一昨年は「キャバレー」、昨年は「不思議の国のアリス」、
そして今年は「1950年代の魅惑のハリウッド」!
今年はZUMAの10周年も記念して、本物の(?)マリリンモンローまで
Happy Birthdayを歌いに駆けつけてくれました。
上の写真の左側が、オーナーのレイナーベッカーです。

会場は、185年前の古い教会を改装したOne Mayfair

シャボン玉をふく黄金の女性も登場して、


Everyone had got together.
スタッフも続々勢揃い。


入り口で渡されたラッフルチケットの抽選会もあり、
Many people received big gifts by ruffles,



then the amazing 50s ballroom dance performance,
50年代の華麗なダンス・パフォーマンスもあり、



The fun night with big family still continued...
I was so glad to see old staff from Zuma where I used to work for 2 and half years,
as well as current staff from Roka Canary Wharf and Charlotte Street branches.
They are my precious friends to spread the seeds of Japanese food and Sake culture in London.
How proud I am to be able to work in this company!

大家族の楽しい夜は更けていきました。
元々ZUMAで2年半過した私は、その頃からのスタッフにも再会でき、
現在のROKA2店舗のスタッフともはしゃげて、会場全員が友達気分。
ロンドンで日本食や日本酒を支える、大切な仲間です。
こんな素敵な会社で働けて、幸せ!

Sake Tasting with Japas


First event in 2012 together with Atsuko of Atsuko's Kitchen.
this was our fourth Sake with Japas (=Japanese Tapas) Tasting event 

昨年いろいろとコラボさせていただいたAtsuko's Kitchen
あつこさんとの、今年初めてのお仕事。
日本酒とジャパス(ジャパニーズ・タパス)のティスティング・ナイトも、
8月にスタートして今晩で4回目になります。

This time, our Japas was based around Chinese New Years,
Starting with a little Japanese lessen by saying:
"Akemashite Omedetou Gozaimasu!"
I tried to add new information for the people who participates every time.
I've got to learn how to create the closer distance with the audience,
as well as how to make the lecture more enjoyable, and more importantly,
I started to feel joy in teaching this time.

We will try to offer you various styles of Sake and Japas through this class this year,
So, Why not join us?

今回は、旧正月を祝って、お正月料理を基調にしたジャパス料理。
「明けましておめでとうございます!」という日本語講座から始まって、
毎回参加しても楽しめるよう、常に新しい日本酒の知識を加える様にしています。
回数を経ることで、お客様との距離のつくりかたや
分かりやすい教え方、そして自分自身が楽しんで参加できる様になってきました。
今年も季節に合わせて様々なジャパスと日本酒のマッチングを
ご提供して行きたいと思っていますので、

i love u: ASTIER de VILLATTE Encens -OULAN BATOR



ASTIER de VILLATTE, the pottery brand created and based in Paris.
I love their ceramic works schemed around their specific color of white.
They are traditional and classic, yet simple, eccentric and charming.
They created the series of aromas and I loved them all.
Composed by the world's first female perfumer Francoise Caron,
Each aroma is named after the different city in the world:

"Following the paths to the Jerusalem city, to The Garden of Olives"
"Ballet movements in the Opera Garnier upon sumptuous parquet floors, polished with beeswax"
"Overheated Delhi, a thousand heady flavors rise to your senses, flushes of eucalyptus beedies"
"A marvelous and delicate earthy aroma of Yakushima island exudes from the dense
and luxuriant vegetation, with its enormous Yakusugi trunks and limpid waterfalls"
Each aroma will carry you to the far away city like daydreaming. 

My favorite scent is named after the capital of Mongol,
OULAN BATOR...
Wild escape upon a desert steppe. 
Crude, supple leather steeped in tobacco and wood smoke from the campfires. 
Ambergris and Angelica Root essence.

Coming from my father's Buddhist temple family,
The aromas of incense has been something intimate,
something connecting me with my ancestors.
Burning incense in my small flat in London is becoming my ritual routine.


パリ市内に工房を持つ陶器ブランド、ASTIER de VILLATTE
(アスティエ・ド・ヴィラット)。
独特の「白」を基調とする彼等の作品は、クラシックの中に、
素朴さや斬新さ、愛らしさの混在する素敵なものばかり。
そのブランドの手がけたアロマシリーズがまた何とも好き。
世界初の女性調香師であるFrancoise Caron(フランソワーズ・キャロン)さん
よって調合され、それぞれに世界各都市をイメージした香りがついています。

「エルサレムの街角、オリーヴの植生する庭への巡礼」や
「オペラ・ガルニエの、蜜蝋で磨かれた木板張りの舞台で行われるバレエ」、
「幾千もの香辛料の香り、熱すぎるデリーの街で流れる、
ビディ煙草のうっとりするような一吹きの風」
「巨大な屋久杉の幹と澄んだ屋久島の豊富な湧き水、密集し繁茂した生態系の香り」
と、私たちを様々な都市へ誘ってくれる夢のような香りたち。

私の一番好きな香りは、モンゴルの首都にあるウランバートル。
OULAN BATOR…
野生への脱走、
しなやかな革に沁み込んだタバコと
キャンプファイアで燃えた木の香り、
アンバーグリス、鎧草の根のエッセンス。

父の実家がお寺だったので、お香は日々欠かさないお家の香り、
先祖につながる、祈りの香り。
この小さなロンドンのフラットで、
時折私だけの素敵な儀式を行ってます。

Gochisousama for today -Hibiscus / ハイビスカス


To Hibisus. I had failed to visit this place for several times, but not this time.
It is a few steps away from sketch and Pollen Street Social where I visited last year.
2 Michelin stared, and also at the World's 50 Best Restaurant Awards by S.Pellegrino,
recognized as "the Academy Award in restaurant industries",
Hibisus had won 43rd position last year, 6 rank up from the previous year.

ずっと行きたくて行けなかった、ハイビスカスへ。
昨年行ったスケッチポーリン・ストリート・ソシアルのすぐ近く。
ミシュラン2つ星を獲得し、
「レストラン界のアカデミー賞」とも呼ばれている
昨年のサンペレグリノ世界のベストレストラン50で、
名門のファット・ダックやレッドベリーに続いて前年から6位アップの
43位に輝いた、今をときめくレストランのひとつです。


When opening the menu, we saw a collection of "Tastes of Winter".
You will tell the waiter which ones you don't want, 
and the chef Claude Bosi will design you courses without those.
It works all fine with me.

メニューを開くと、並べられた「冬の味」。
この中から苦手なものをウェイターに伝え、それらを覗いたものから
シェフのクロード・ボジ氏がサプライズでコース内容を組んでくれるというもの。
何でもかかってきなさい。

inside the frozen cold glass. it was a great wake up call...

キンキンに冷えたグラスの中に運ばれたのは、
ロード・ランボーンアップルと人参ソーダ
目がぱっちり冷める爽快感。


Velouté of Pumpkin, Crozier Blue Cheese, Truffle
harmony of the aromas and flavor of sheep blue cheese, 
picked pumpkin on top, toasted pumpkin seed, truffle, and creamy & buttery pumpkin soup
was like eating the whole earth!
Did anyone know that I love pumpkin from my head to toe?

かぼちゃのヴルーテ、クロージャーブルーチーズ、トリュフ
ヴルーテとは、フランス料理で肉や魚、野菜等をコンソメで煮て布漉しし、
卵黄・クリーム・バターを加えたポタージュのことだそう。
羊のブルーチーズ特有の臭みと上に乗ったかぼちゃのピクルス、
香ばしいかぼちゃの種とトリュフ、そしてまろやかなカボチャのスープが
まるで地球丸まま食べている様な絶妙なバランス。
私が根っからのカボチャが好きなの、どなたか知っていた?

Ginger, Cream & Smoked Olive Oil Dressing

新かぶで包んだデボンシャー・クラブ、
ケント湾で採れた海草、生姜、クリームとスモークオリーブオイルドレッシング
酢の物のような。


Roast Skate Wing, New Season Fennel, Clementine & Truffle
Dried skate wing is one of the most popular and loved snack with Sake in Japan.
How one could imagine that our ordinary hero can transform his shape and style
into so posh and elegant, only by crossing the oceans?
Gelatinous texture of Collagen-full skate wing was perfectly cooked and
melted in my mouth like a winter snow.
The freshest aromas of new fennel and clementine gave a life to this dish.
I so wish to enjoy this with a glass of sake.

エイヒレのロースト、新フェンネル、クレメンタインとトリュフ
日本の皆さんの大好きなお酒のお供、エイヒレ君が、海を渡って
こんなお洒落な姿に変身してしまうとは誰が想像したことでしょう。
エイヒレの含むコラーゲンゼリーの質感と、
雪のように口の中で消える柔らかい焼き加減、
新フェンネルのしっかりとした香りと蜜柑の素朴な甘さが素晴らしい一皿。
これ、日本酒に合わせたいなぁ。


Roast Adour Foie Gras, Sea Buckthorn Gel, Apple & Szechwan Pepper Compote
I had never tasted sea blackthorn, but it looks like this and tasted like
tangerine with more earthy bitter flavor.

アドュール・フォアグラのロースト、
シーバックソーンのジェル、林檎と山椒のコンポート
シーバックソーンはオレンジ色の野生のベリーのようなもので、
蜜柑のような甘みと酸味に、独特の渋みのある味でした。


Roasted Goosnargh Duck, Tardivo, Smoked Eel, Horseradish
Tardivo is purple colored, Italian vegetable with charming curling leaves.
I loved the salt on top of duck.

グースナロー鴨のロースト、タルディーヴォ、スモーク鰻、西洋山葵
タルディーヴォとは、カールした赤紫の葉がチャーミングな
イタリアのサラダリーフです。鴨の上のお塩が美味しかった。


Apple Puree, Sweet Celeriac, Chestnut Cream
Our waiter told me to scoop out each layer and eat together.
After a bite, we only nodded.
by adding, subtracting or multiplying, counteracting or neutralizing,
The food here is the whole new world of science of tastes.

林檎のピューレ、スウィート・セロリ、栗のクリーム
この三層をすくって一緒に食べてね、とウェイターに伝えられ
一口ふくんで頷き。足したり引いたり掛けたり、打ち消したり中和したり、
ここの料理は、新しい味覚科学の世界です。


Cream of Jerusalem Artichoke, Caramel, Toasted Oat Ice Cream
This plate reminded me of the strong soil of cold snowing winter,
when all the sprouts of lives sleep.

キクイモのクリーム、キャラメル、焦がしオーツ麦のアイスクリーム
寒い雪のなか、様々な命の芽が眠る、力強い冬の土を想像しました。


I liked their unique expressions on seasons and lands,
as well as their use of international rare ingredients and spices
which is not only as the accent, yet as deeply calculated relations 
and chemical reactions with main ingredients.
"simply delicious, yet makes you deep in thought."
It gave me wider perspective on how to match sake with food.

ハイビスカス独特の季節や土地の表現、気に入りました。
随所において日本料理や様々な文化圏の食材や香辛料が使われていて、
ただアクセントに、というよりもその効力と素材との関係性や化学反応を
非常に熟慮されたような、「シンプルに美味しいけれど、深く考える味」
という印象が残りました。日本酒と料理との食べ合わせにおいて、
非常に視野が広がるアイデアをいただきました。

my tasting note: Kikuisami / 菊勇を味わう


End of last year, President Takehiro Sato of Kikuisami Brewery in Yamagata prefecture
came to dine at ROKA Charlotte Street.
He was small with his calm and gentle eyes,
told me that he enjoys reading my blog in daily basis. bless.
I enjoyed sharing some talks on my last visit to Sakata city, where Kikuisami locates
and Mr. Sato's impression in London on his first visit to UK.
I got to taste the sake he gave me to try during my Xmas holidays.

昨年末、山形県 菊勇酒造の佐藤剛宏社長が
ROKAのCharlotte Street店にお食事にいらしました。
とても穏やかで優しい瞳が印象的な小柄な方。
普段から私のブログも見て下さっているとの嬉しいお言葉も頂き、
「酒田じゃこんな料理は食べれない」とROKAの料理も楽しんでくださいました。
一度訪れたことのある酒田の町の話や、初訪英の佐藤社長の見たロンドンなど、
短い間とはいえ様々なお話をすることができました。
クリスマス休暇中に、頂いた日本酒を試飲した際のティスティングノートを
皆さんに少し紹介。写真左から:

1) Sanjurokuninshu Dewano Sato, Junmai
Rice: Dewanosato / Polishing rate: 70% /  Yeast: Yamagata Kobo
Sake Meter Value: +2 / Acidity: 1.5 / Alcohol: 15-16%
Description
Using Yamagata's local rice Dewanosato, which is famous for its large size of pearl
("Shinpaku"in Japanese, concentrated starch), This rice is easier to have clean and fine sake
without much polishing.
President Sato told me that this sake won the "Warm Sake Award"
in one of the national sake competitions in the past.
Also this sake is popular for its cost performance,
with its reasonable price about £7.6 for a 720ml bottle !
Tasting Note
Cleanest sake I'd ever tasted with polishing ratio of 70%. Great in any temperature.
Running through your throat so pleasantly with a impression of pronounced minerality.
It reminds me of Hakurakusei sake in Miyagi prefecture, which is clean and delicate
yet lifts up the flavors of dishes so well.

1)三十六人衆 出羽の里 純米
原料米: 出羽の里 精米歩合: 70%  酵母:山形酵母
日本酒度: +2  酸度:1.5 アルコール: 15~16%
お酒について
心白部分が大きいことで有名な山形県産米、出羽の里。
低精白でも雑味の少ない綺麗なお酒に仕上がりやすいの出そう。
こちらのお酒は、過去に日本全国美酒鑑評会で「お燗大賞」を受賞。
日本国内販売価格が四合瓶(720ml)で998円(税込み)のため、
コストパフォーマンスにも定評のあるお酒です。
ティスティングノート
 精米歩合70%とは思えない透明感。
すっきりと口の中を綺麗に流れてくれるのに、
芯のある力強さやミネラル感を口中に感じます。他銘柄になりますが、
宮城の伯楽星さんに似た様な、控えめながらも様々な食べ物のうまみを持ち上げてくれる
隠れた大黒柱的なお酒だと感じました。
どんな温度帯でも楽しめそう。


2) Kikuisami Hiden, Daiginjo
Rice: Yamadanishiki / Polished Ratio: 35% / Yeast: Yamagata Kobo
Sake Meter Value: +4 / Acidity: 1.2 / Alcohol 16.5%
Description
Gold medal winning Daiginjo sake for Sake Category at International Wine Challenge last year.
This sake is produced in the 750kg tank, much smaller than the average,
also only comes from 10-15% of the whole batch with Shizuku-dori,
the most supreme way to filter the sake by hanging moromi mash in the small bags,
and wait until clear sake naturally drops out of the filter.
Tasting Note
Start with spices like anise or cinnamon and creamy & syrupy sweetness of lilies,
lychees, delicate peaches and end with sharp cleansing finish and long lingering aftertaste.
Pleasant bitterness gives a good compliment with food like octopus,
brie cheese or white sauce with white fish.

2)菊勇 秘伝 大吟醸 
原料米:山田錦  精米歩合:35% 酵母:山形酵母 
日本酒度:+4 酸度:1.2 アルコール:16.5% 
お酒について
この大吟醸は昨年のインターナショナル・ワイン・チャレンジの
サケ部門 吟醸・大吟醸の部にて「ゴールド・メダル」を獲得した金賞酒。
出品酒用の750キロの小仕込みで、その中の10〜15%のみしか取れない
雫取り(もろみを小分けにして酒袋で吊るし、自然の力で垂れ落ちる雫を
一滴一滴斗瓶に集めたもの)の部分を詰めた最高級クラスのお酒です。
テイスティングノート
八角やシナモンのようなスパイスと百合やライチ、白桃のような
とろっとした甘さで始まり、鋭いキレですっきり洗い流してくれる。
非常に長い余韻の残る味わい。心地いい苦みが特徴的で、
タコやブリーチーズ、白身魚のホワイトソース煮などと相性がよさそう。


Kikuisami & Sanjurokuninshu is not sold in UK yet,
I will see what I can do to introduce this sake to this country!

Sake Season @Roka: SHINSHU / 日本酒の季節@Roka:新酒


There are stream of lives given birth to the world 
while every organism still hibernates in deep winter. 
It is the season’s firstly pressed Sake.
Some breweries start brewing Sake in the end of October, 
and around December is when the first batches of the Sake are pressed. 
It is called “Shinshu“ literally means “new sake“. 
Most of the sake is pasteurized and aged from 6 months to 1 year after pressing 
and it makes the flavor of sake mellow and round out. 
Shinshu is sake released without pasteurization and its maturation. 
And it has a extremely fresh and zingy flavours 
you can only enjoy during the beginning of new year.
At Roka, we have received 4 different Shinshu Sake as a seasonal selection.

 多くの生き物が眠る冬に、なによりも早く命を芽吹くものがあります。
それは、日本酒。
早い蔵だと10月から酒造りが始まり、
その年最初にできたお酒の絞りが12月ころから始まります。
この生まれたばかりのお酒は「新酒」と呼ばれ、
殆どの日本酒が加熱処理をしたあと半年〜1年程度熟成させるのに対し、
新酒は火入れも熟成も一切しないのが特徴。
びっくりするくらいフレッシュで若々しい味わいは、
年の初めのみ楽しめる季節のおくりものです。
今年は震災の影響ため日本と同じ時期に揃う新酒が少なく、
昨年の秋あがりや熟成生酒も含めた4種になってしまいましたが、
まだまだフレッシュ感を充分に味わって頂ける品揃えになっています。



1) Senkin, Ginjo Muroka Genshu / 仙禽 吟醸無濾過原酒
Origin: Tochigi
Rice: Hitogokochi
Rice polished ratio: 55%
AVB: 16%
Note:
Senkin Brewery is micro-brewery run by 2 young brothers. The concept of their sake flavor is “marriage of the higher sweetness and acidity”, “wooden barrel making”, “hanging-sack-filteration”, “not-using Yamadanishiki rice”, which makes their sake so special and unique.
Description
clean, soft and delicate sake with pleasant acidity. It will go well with wide range of food from sushi/sashimi to grilled dishes.

2) Tsukasa Botan, Honjozo Reika Nama / 司牡丹 本醸造零下生
Origin: Kochi
Rice: Yamadanishki, Koshihikari, Akitsuho
Polished ratio: Koji rice 65% & Kake rice 70%
AVB: 16.8%
Note:
Kochi prefecture on the south coast of Shikoku, historically called the Tosa region, has been synonymous with sake brewing since the 17th century. The name Tsukasabotan is inspired as follows: Botan translates as peony, sometimes called the king of flowers. Tsukasa denotes "chief" or "high office", thereby meaning the sake aims to be the very best of the best.
Description
Clean, crisp and refreshing mint on palate with beautiful aromas of sea breeze.

3) Fuyu no Tsuki, Junmai Ginjo Nama / 冬の月 純米吟醸生
Origin: Okayama
Rice: Nihionbare  
Rice polished ratio: 58%    
AVB: 16-17%
Note:
Okayama-prefecture, a famous peach producing area, and the birthplace of legend Momotaro (Peach boy), Kamikokoro brewery was founded in 1913. Kamikokoro brewery is a relatively young micro sake brewery.
Description:
This aromatic Sake is uniquely produced by using yeast from local white peaches. It has creamy and pungent nectarine flavors with lingering finish. This sake is great on its own, yet will bring up the flavors of highly spiced / seasoned dishes with Yuzu, garlic or truffles.


4) Kamoizumi “Red Maple”, 2year aged Nama Genshu 
/ 賀茂泉「レッドメープル」二年熟成生原酒
Origin: Hiroshima
Rice: Hattannishiki
Rice polished ratio: 50%
AVB: 18.5%
Note:
The Maegaki family who run Kamoizumi committed to unfiltered Junmai production in 1971 when most of Japan insisted on charcoal filtering. Where most breweries saw impurities, Kamoizumi tasted complexities.
Description:
Un-pasuteurized, undiluted and aged 2 years below freezing brings rich and satisfying flavors of nuts and winter spices, Ribs and  pork and teriyaki sauce would be great company to enjoy the depth of this sake.

Takashimizu, Junmai Daiginjo / 高清水 純米大吟醸
Origin: Akita  
Rice polished ratio: 45%      
AVB: 15.5%
Note: 
Akita Shurui Seizo, producer of Takashimizu brand, is a joined force of Akita’s 12 small sake producers who got together back in 1944 in order to overcome the war-time shortage of ingredients. These breweries gave up their own brands which they inherited and took on the name Takashimizu, the name of the hill on which Akita castle had once stood upon.
Description
clean and creamy Daiginjo with freshness of honeydew melon.

Gochisousama for today -NOPI ノピ



New Year dinner with the people who are always there for me.
We had been to NOPI Restaurant, the latest venture of Yotam Ottolenghi,
famous chef / restaurateur for Ottolenghi,
the great deli / patisserie places in London.
NOPI locates in the heart of Soho area, in between Piccadilly and Oxford Circus.

日頃からお世話になっている方々と一緒に、新年会。
ロンドンの人気デリ&ベーカリーのOttolenghi(オットレンギ)で有名な
シェフで実業家のヨタム・オットレンギ氏が
一番最近に手がけたレストラン、NOPI(ノピ)さんへ伺いました。
お買い物で有名なピカデリーやオクスフォードサーカスの真ん中、
SOHO地区の中にあります。


They have collection of small tapas like dishes to share.
In London, up until 5-10 years ago It common to order and serve
individual dishes for each course,
however late trend in the restaurant industry has been "sharing style",
such as Tapas dishes at Spanish bar,
Izakaya, Japanese bistro pub food to share.
For me, growing up sharing the same meal with family and friends,
tt is such a natural and usual style to dine;
Yet for the people here, it's such a new and eye-opening concept.
Yummy food tastes much yummier when shared.

こちらの料理はタパスの様な小皿が中心で、
一人3皿前後をみんなでシェアするスタイル。
これまで、一人個々の料理を前菜、スープ、主菜、デザートとコースで
頼むのが一般的だったロンドンのレストラン業界ですが、
ここ5〜10年で、スペインバルのタパス料理や日本の居酒屋料理など
コースやフランス料理の概念に捕らわれない「シェア・スタイル」の
レストランが急増しています。
「同じ食べ物を共有する」のが当たり前の私にとって
あまりにも普通のスタイルなのですが、こちらの方にとっては
とっても新鮮なよう。
美味しいものは、シェアしたほうが絶対に美味しい。

no best or worst, All the dishes are so superb...to be honest.

Guava compote, streusel, cardamom yoghurt was also amazing...

抜かりのないバランス、正直に、全て美味しかった。
写真撮り忘れましたが、
グアバのコンポートとシュトロイゼル、カルダモン風味のヨーグルトも
本当に美味しかった…。

The creation of Yotam Ottolenghi is always about his origin, Israel spices and harbs.
His dishes are very simple and plain, yet combines with a pinch of spices such as 
cinnamon, nutmeg, cardamom, fennel, coriander and mint.
They gives completely different and new dimension to the dishes 
and make it so unique and special.
They are also great with matching with Sake and wine for sure...
I highly recommend his 2 cook books.

イスラエル人であるヨタム・オットレンギ氏の作品は、
馴染みのある食材や調理方法に、イスラエルなど中東独特の
スパイスやハーブ、食材を組み合わせたもの。
どれも食材の味わいに焦点をおいた淡白でプレーンな料理ながら、
フェネルやシナモン、香草、ナツメグやカルダモン、ミントなどの
料理に全く異なる側面を与えてくれるぴりっと個性的な香辛料の使い方が秀逸。
ワインや日本酒にも合わせやすい料理ばかりです。
彼の2冊の料理本も本当にお薦めです。
